About this recipe: This tangy pomegranate salad dressing is ready in minutes and tastes great served on brown rice salads, chicken salads and even kale salads. It's also a lovely change from the norm!


Serves: 24 

  • 240ml olive oil
  • 240ml pomegranate juice
  • 240ml rice vinegar
  • 50g sugar
  • 2 tablespoons chopped shallots
  • 1 1/4 teaspoons chopped garlic
  • 1 teaspoon white pepper
  • coarse sea salt to taste

  1. Place olive oil, pomegranate juice, rice vinegar, sugar, shallots, garlic, white pepper and salt in a blender or food processor. Cover and blend until smooth, about 2 minutes.


If you are not using the dressing straight away, store in a covered jar in the fridge for 1 or 2 days.
