This tangy pomegranate salad dressing is ready in minutes and tastes great served on brown rice salads, chicken salads and even kale salads. It's also a lovely change from the norm!
If you are not using the dressing straight away, store in a covered jar in the fridge for 1 or 2 days.
Followed the recipe to the letter with the exception of cutting the sugar in half (personal taste preference) which resulted in the perfect balance of sweet-tart for us. A friend gave me some pomegranates today so I used the seeds for this recipe. I also substituted balsamic vinegar, white onions for the shallots and honey for the sugar.
