    About this recipe: I posted my first version a few years back. Since then I have come up with a new and improved recipe that is so moreish and still goes down a hit at work every time! Use you favourite flavoured Oreo® cookies to create these gooey, fudgey brownies! Hope you enjoy ;)

    Ingredients
    Serves: 16 

    • 185g plain chocolate, broken into pieces
    • 3 eggs
    • 185g unsalted butter, at room temperature
    • 275g caster sugar
    • 85g plain flour
    • 40g cocoa powder
    • 1 packet of Oreos®, flavour of your choice

    Method
    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Preheat oven to 180 C / 160 C fan / Gas 4. Line a 20cm square tin with baking parchment.
    2. Melt the chocolate in a double boiler or in a pan over barely simmering water, stirring frequently. Once melted, remove from the heat and set aside.
    3. In a separate bowl, beat together the eggs, butter and sugar until the mixture is pale and creamy. Once the chocolate mixture has cooled, add to the egg mixture and mix together until well combined.
    4. Finally, sift together the flour and cocoa powder and add to the chocolate mixture and gently fold together.
    5. Spoon half of the mixture into the greased baking tin and spread to make an even layer. Lay out your favourite Oreos® on top to make another layer and then cover with the remaining brownie mix and spread with a spatula. Chop up the remaining cookies and sprinkle over the top of the brownie mix, pressing each in slightly.
    6. Bake in the preheated oven for 35 to 40 minutes. Remove from the oven and leave the brownie to cool in the tin completely.
    7. Remove the cooled brownie from the tin and place onto a chopping board and using a sharp knife, chop into chunks. Enjoy :)
