About this recipe: A delicious alternative to the traditional, this chilli is made with pork loin coated in a chipotle chilli paste and slow cooked with wild rice and cannellini beans.


Serves: 8 

  • 1 (675g) boneless pork loin
  • 4 tablespoons chipotle chilli paste
  • 1 tablespoon hot sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon ground chilli powder
  • 450g tomato passata or sieved tomatoes
  • 450ml chicken stock
  • 1 (400g) tin cannellini beans or white kidney beans
  • 6 slices bacon, cut into 2.5cm pieces
  • 80g wild rice
  • 1/4 onion, diced
  • 1/2 jalapeno chilli pepper, diced
  • 100g grated mature Cheddar cheese

  1. Place the pork loin into a slow cooker. Mix chipotle chilli paste, hot sauce, cumin and chilli powder together in a small bowl. Rub paste mixture over pork.
  2. Stir tomato passata, chicken stock, beans, bacon, wild rice, onion and diced jalapeno pepper together in a large bowl; pour into slow cooker, coating the pork.
  3. Cook on Low until flavours are combined and pork is tender, about 8 to 9 hours. Remove cooked pork from the sauce and shred using 2 forks. Return to the slow cooker and mix well.
  4. Top individual servings with grated cheese.
