About this recipe: Perfect mid-week meal with minimal fuss (and washing up). Just throw everything into one pot then enjoy in warm bowls with grated cheese on top.

Serves: 2 

  • 170g pasta of your choice (e.g. penne)
  • 500ml chicken stock
  • 3 large tomatoes, diced
  • 1/2 onion, chopped finely
  • 1/2 red pepper, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons tomato puree
  • 2 tablespoons ketchup
  • 2 teaspoons hot paprika (optional)
  • 1 teaspoon onion powder (optional)
  • salt and pepper, to taste
  • 3 teaspoons olive oil (optional)

Prep:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Simply add all of your ingredients into a large saucepan over a medium heat, stir and cover. Cook on a medium heat for 15 minutes or until the pasta is al dente and serve hot with grated cheese.
