About this recipe:This rocket, tomato and walnut salad is served with a tangy pomegranate and sumac dressing. If you double up on the ingredients, it'll make a very nice starter for a dinner party or Christmas dinner. It's colourful and easy to make. Add fresh pomegranate seeds if you like.
For the dressing
80ml freshly squeezed lemon juice
1 tablespoon pomegranate molasses
1 tablespoon white vinegar
1 teaspoon sumac powder (optional)
salt and freshly ground black pepper to taste
For the salad
150g halved cherry tomatoes
40g rocket leaves
30g walnut halves

Whisk lemon juice, pomegranate molasses, vinegar, sumac, salt and freshly ground black pepper together in a small bowl to make the dressing.
Mix cherry tomatoes, rocket leaves and walnut halves together in a large bowl. Pour dressing into bowl and toss salad well to coat.
