    About this recipe: This rocket, tomato and walnut salad is served with a tangy pomegranate and sumac dressing. If you double up on the ingredients, it'll make a very nice starter for a dinner party or Christmas dinner. It's colourful and easy to make. Add fresh pomegranate seeds if you like.

    Ingredients
    Serves: 2 

    • For the dressing
    • 80ml freshly squeezed lemon juice
    • 1 tablespoon pomegranate molasses
    • 1 tablespoon white vinegar
    • 1 teaspoon sumac powder (optional)
    • salt and freshly ground black pepper to taste
    • For the salad
    • 150g halved cherry tomatoes
    • 40g rocket leaves
    • 30g walnut halves

    Method

    1. Whisk lemon juice, pomegranate molasses, vinegar, sumac, salt and freshly ground black pepper together in a small bowl to make the dressing.
    2. Mix cherry tomatoes, rocket leaves and walnut halves together in a large bowl. Pour dressing into bowl and toss salad well to coat.
