Sweet and spicy fig compote

    Chilli flakes add a surprisingly spicy twist to this rich fig topping for cheese. It's easy to double or treble the quantities if you would like to make it for a party or Christmas gifts.

    Serves: 6 

    • 200g dried figs, sliced
    • 235ml red wine
    • 50g sugar
    • 1 tablespoon honey
    • 1 teaspoon chilli flakes, or to taste
    • 1 pinch salt

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Heat figs, red wine, sugar, honey, chilli flakes and salt in a small saucepan over medium heat. Simmer until wine is reduced and thickened, about 20 minutes, stirring occasionally.

    Oh my gosh, this was so good! I could just eat it with a spoon and nothing else! I ended up only using 1/2 tsp of red pepper flakes because I wasn't sure how spicy it would be, though next time I think I'll use a a whole tsp, as it wasn't particularly spicy. Once the wine reduced and thickened, I ran everything through my mini food processor, just to make it more spreadable. I served it on table water crackers with mini slices of Dubliner cheese.
