    About this recipe: Fresh orange juice and zest adds a lovely flavour to this quick loaf cake that's packed with dates and walnuts. You can use pecans if you prefer.

    Makes: 1 loaf cake

    • 1 egg
    • 2 tablespoons butter, softened
    • 200g caster sugar
    • 3 tablespoons grated orange zest
    • 160ml fresh orange juice (about 2 large oranges)
    • 80ml boiling water
    • 1 teaspoon vanilla extract
    • 250g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 3/4 teaspoon salt
    • 60g chopped walnuts
    • 145g dates, pitted and chopped

    1. Preheat oven to 180 C / Gas 4. Grease one 23x13x7cm loaf tin.
    2. Beat egg slightly; add butter and sugar. Beat until smooth. Stir in orange zest, 160ml orange juice, 80ml of boiling water and vanilla extract into butter and sugar mixture.
    3. In another bowl, add flour, baking powder, bicarbonate of soda and salt. Stir in walnuts and dates. Pour this dry mixture into the wet orange mixture and stir. Spoon into greased loaf tin.
    4. Bake in preheated oven for 1 hour until a skewer inserted into the middle of the loaf cake comes out clean. Cool in the tin for 10 minutes. Remove from tin and finish cooling on a wire rack.
