1 packet fresh tortellini (ready made, store bought)
2 to 3 tablespoons almond butter
extra virgin olive oil, for drizzling
fresh Parmesan cheese, grated or shaved
1 to 2 teaspoons honey, or to taste
salt, to taste
1 to 2 handfuls leafy green salad of your choice (optional)

Bring a saucepan of water to the boil. Add the tortellini and cook according to the instructions on the packet, however I recommend you slightly under cook it and drain.
In a non-stick shallow pan, heat some olive oil and gently fry the tortellini. If you slightly undercooked your tortellini then it's less likely to stick to the pan.
Add some honey, salt to taste and around 2 tablespoons of the almond butter to the pan. Continue to gently fry and stir the tortellini until golden brown.
Serve the tortellini with a drizzle of olive oil, freshly grated Parmesan cheese and green leaf salad of your choice. Enjoy!
Tip 1: Ensure to slightly under cook the tortellini as we cook it further in a shallow pan, it's less likely to fall apart and stick to the pan. Tip 2: Add as much almond butter and honey as your taste buds dictate. Tip 3: Almond butter is widely available in health food stores and most supermarkets nowadays. I use often use it in pasta dishes for it's savoury nutty flavour.
