200g dark chocolate, chopped
225g caster sugar
1 teaspoon vanilla extract
3 eggs, lightly beaten
70g teff flour
30g cocoa powder

Preheat oven to 180 C / Gas 4. Lightly grease a 20cm square baking tin.
Place the chocolate and butter into a glass or metal bowl and set over the top of a pan of barely simmering water. Stir occasionally until melted and smooth. Once completely melted, remove from heat. (You can also do this in the microwave.)
Add sugar and vanilla extract; whisk well. Add eggs, one at a time, mixing well after each addition.
Sift teff flour and cocoa powder over mixture and mix well until all ingredients are incorporated. Pour into prepared baking tin.
Bake in preheated oven for 40 minutes, or until a skewer inserted into centre of brownies comes out clean. Let cool for a bit before slicing into squares.
Teff flour is a light brown wholegrain flour milled from small grains. It tastes slightly sweet and is ideal for gluten-free baking.
