Pour the cream into a saucepan and bring just up to the boil over a high heat. Chop the chocolate into small pieces and place in a large bowl. Pour in the boiling cream and mix till well blended and smooth. Cool, and put in the fridge for 2 to 3 hours.
Scoop out teaspoons of the mixture into walnut sized balls with your hands. Sprinkle the coconut on a plate and roll the balls in it until completely covered. Will keep in a cool place for 3 days and able to freeze for up to 1 month.
