    About this recipe: There's loads of things you can do to an apple cake to to suit your taste so I'll post the basic recipe below and put my top suggestions in the footnotes if you want to experiment.

    Serves: 8 

    • 225g self raising flour
    • 115g golden caster sugar
    • 225g (2 to 3) cooking apples, peeled and cored
    • 1 egg, at room temperature
    • 100ml milk (or double cream, add a splash more)
    • 115g butter
    • 45g demerara sugar (or golden caster sugar) to finish

    1. Preheat the oven to 180 C / Gas 4. Grease a deep 20cm cake tin and line with baking parchment.
    2. Sieve the flour and sugar together in a mixing bowl. Cut up the cooking apples into small pieces and add them to the dry mix.
    3. Whisk egg and milk (or cream if using) together and put it in to your dry mix as well as adding the butter (I always melt my butter first it makes easier to mix in) then cream it together. Pour into the prepared cake tin.
    4. Bake in the preheated oven for around 40 minutes but start to check on it after 35 minutes. The cake is ready when it is risen and golden and a skewer inserted into the centre comes out clean. Remove from the oven and sprinkle with demerara sugar. Allow to cool on a cooling rack before slicing and serving.


    you could add about 85 to 100g of a different fruit such as raisins. I like to add strawberries or cherries but if your going to add a moist fruit like that first I suggest you mix a teaspoon of flour with the fruit first to help prevent it from sinking. You could add a teaspoon of mixed spice to make it taste a little Christmasy or 1/2 a teaspoon of vanilla or 1 teaspoon of cinnamon. You know it's really up to you what you do with it because there really is just so many ways to change this recipe
