Traditional Turkish delight

    This Turkish delight is a must for Christmas and any other occasions like birthdays, anniversaries, etc. My sister in law loves it and so I thought I would make some at this time of year. It is lovely and sweet.

    Ingredients
    Makes: 30 pieces Turkish delight

    • 200ml water
    • 25g powdered gelatine
    • 4 teaspoons rose water
    • 450g caster sugar
    • 3 to 4 drops red food colouring
    • 1 teaspoon cornflour
    • 3 tablespoons icing sugar

    Method
    Prep:15min  ›  Cook:25min  ›  Extra time:1day chilling  ›  Ready in:1day40min 

    1. Brush a 20x25cm cake tin with a little sunflower oil.
    2. Pour water into a saucepan with the gelatine, rose water and caster sugar and bring to the boil; simmer for 20 to 25 minutes. Towards the end of cooking, stir in your red food colouring.
    3. Transfer the mixture to the prepared tin, let it cool down, then place into the fridge for 24 hours.
    4. Mix together 1 teaspoon of cornflour with 3 tablespoons icing sugar.
    5. Remove the Turkish delight from the fridge and cut into cubes. Place in a dish and dust with the icing sugar mixture.
    6. This is how your finished Turkish delight should look.

    This is in no way traditional, turkish delight is meant to be set with starch. This is just rose flavoured jelly.  -  12 Dec 2016
