These delightful butter cookies indulge you in the paradise world of Mauritius. This is a simple butter cookie coated with a layer of sugar crunchy glaze. Tip: to have a soft crunch to the cookies, do not add excess liquid to it.
Add melted butter to the flour followed by milk, vanilla, and vinegar. The vinegar helps to create layers in the cookies. Bring the mixture together into a dough.
Knead the dough with a dough scraper in a motion of scraping from the bottom to the top. This will create flakiness in the dough just like the tart crust. Allow the dough to rest in the fridge for about 15 minutes.
Remove from the fridge and roll it with a rolling pin to a thickness of about 3.5cm (1 1/2 in). Cut with a cookie cutter into shapes about the diameter of 7.5cm (3 in). Line two baking trays with baking parchment and arrange the cookies on the trays.
Bake in the preheated oven for 15 minutes, or until firm. Make sure that the cookies don't brown. Remove from the oven.
For the glaze:
Mix the ingredients for the glaze together and dip the cookies in the glaze even if they are still warm. Add a few more drops of milk if the glaze is too thick. Enjoy!
