1 onion, finely chopped
500g bread cubes
75g dried cranberries
2 tablespoons mixed herbs
1 1/2 teaspoons salt

Melt butter or margarine in a pan over medium heat. Add onion and cook and stir till onion is tender, but not browned. Remove from heat and combine with bread cubes, cranberries, herbs, salt and pepper. Stir well.
Add enough chicken stock to bread cube mix to moisten. Place in a 2 litre baking dish or loaf tin. (At this point you can freeze the stuffing if you want to make it ahead of time and bake later.)
Bake, covered, in a preheated 160 C / Gas 3 oven for 30 minutes (defrost at room temperature beforehand if stuffing was frozen). Uncover and bake a further 15 minutes.
