About this recipe:For a satisfying Sunday brunch, you can't beat homemade sausage burgers. By making them with turkey breast and some secret ingredients, the fat content falls to less than a gram a piece!
450g (1lb) skinless, boneless turkey breast
115g (4oz) cooked brown or basmati rice
4 tbsp puréed prunes
1 tbsp Dijon mustard
½ tsp dried sage
½ tsp dried rosemary, crumbled or finely chopped

Cut the turkey breast into large chunks. Place in a food processor and pulse until coarsely minced.
Transfer the minced turkey to a mixing bowl. Add the rice, prune purée, mustard, sage and rosemary, and stir just to combine.
Shape the mixture into 12 burgers about 5cm (2in) in diameter. Spray the grill pan with cooking spray or coat it with olive oil. Preheat the grill to moderate.
Place the burgers on the grill pan and grill for about 3 minutes on each side or until cooked through.

*For easier mornings, make the sausage burgers the night before. Keep them, on a plate covered with cling film, in the refrigerator. Add an extra 30 seconds or so per side to the cooking time to compensate for the fact that the burgers are chilled. *You can substitute minced chicken breast or lean minced pork for the turkey.
Puréed prunes are great for healthy cooking. They replace the fat in this recipe, and can also be used as a substitute for butter, margarine or other fat when baking.
