Easy cranberry and cashew chocolate fudge

    Fudge doesn't get easier! Just a few simple ingredients and 15 minutes of preparation is all you need. The hardest part is waiting for the fudge to set!

    Makes: 36 pieces

    • butter, for greasing
    • 350g dark chocolate, chopped
    • 250ml condensed sweetened milk
    • 90g roasted, salted cashews
    • 60g dried cranberries
    • 1 teaspoon vanilla extract

    1. Butter a 20cm square baking tin or dish.
    2. Heat chocolate and condensed milk over low heat, stirring until chocolate is melted and mixture is smooth, about 5 minutes. Stir in cashews, cranberries and vanilla.
    3. Pour mixture into prepared tin, spread evenly, and chill in fridge until set, about 4 hours. Cut into squares and serve.


    Store in a cool, dry place. Wrap in foil or greaseproof paper and keep in an airtight tin.
