    About this recipe: An easy, yet delicious vegetable side dish for roast beef or pork.

    Ingredients
    Serves: 4 

    • 2 large carrots, peeled and thickly sliced
    • 2 medium parsnips, peeled and thickly sliced
    • 1 tablespoon butter, or to taste
    • salt and freshly ground coarse black pepper, to taste

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Bring a medium pot of water to the boil. Add sliced carrots and parsnips; simmer for 10 to 12 minutes, or until tender. Drain well and transfer back into the pot.
    2. Add butter and mash the vegetables to the consistency you like. Season with salt and lots of black pepper.
