    A rich, smooth, vanilla custard for pouring over your favourite puddings or to use as the filling in a fruit tart. This recipe will easily serve 6 people as a pouring custard. After you see how easy and incredibly gorgeous this tastes - you might even vow never to make custard with powder again!

    Serves: 6 

    • 450ml milk
    • 1 vanilla pod, split
    • 100g caster sugar
    • 5 egg yolks
    • 2 level tablespoons plain flour
    • 1 teaspoon of soft butter

    1. Bring the milk and a split vanilla pod to the boil in a heavy-bottomed saucepan. Remove from the heat and set aside to let the vanilla infuse into the milk.
    2. In a large bowl, whisk caster sugar and egg yolks until pale. Whisk in plain flour.
    3. Remove the vanilla pod from the milk and gradually whisk the warm milk into the egg yolk mixture. Pour it into a saucepan and cook, stirring, until it just comes to the boil, then simmer very gently for 2-3 minutes to cook out the floury taste. Whisk in 1 teaspoon of butter.
