Vegan chocolate pudding

    You wouldn't guess this pudding can be completely vegan and sugar free! A rich creamy chocolate pudding - best served chilled. Add a splash of brandy or flavoured liqueur for a special occasion, or coffee powder, flavoured oils etc.

    Serves: 4 

    • 4 ripe avocados, stoned
    • 4 tablespoons dark hot chocolate powder (70% cocoa solids)
    • 4 tablespoons chopped dates
    • 2 tablespoons sweetener (e.g. xylitol)
    • 1 to 2 tablespoons flavourings of your choice (e.g. brandy, liqueurs, coffee)
    • 4 sprigs fresh mint, to serve

    1. In a bowl, roughly mash the avocados. Add the chocolate powder, dates and sweetener of choice and mix. Put into a food processor or using a hand blender, blend well until smooth and creamy.
    2. Mix in a tablespoon or two of any other flavouring - coffee, liqueurs, cinnamon, orange oil etc. Spoon into 4 serving bowls and chill for 1 hour. Serve with a sprig of fresh mint.

    Options for non-vegans

    If you want to make it lighter in chocolate taste whip a small tub of cream and mix into the pudding in step 1 - or soya cream substitute if you are going for a vegan pudding. You could also use honey instead of artificial sweetener.
