Smoked salmon and cream cheese rolls

    This quick and easy starter is perfect for special occasions like Christmas or New Year's Eve, but also great all year long. Carrot and fennel make a refreshing accompaniment for smoked salmon.

    Makes: 12 rolls

    • 2 carrots, peeled
    • 1 fennel bulb
    • 250g cream cheese, softened
    • 1 tablespoon milk
    • 1 lemon, juiced
    • 1/2 teaspoon minced chives
    • 250g smoked salmon

    1. Chop 1 carrot into small cubes and julienne the other carrot (cut out long and thin strips). Do the same with the fennel - cube half and julienne the other half. Set aside.
    2. In a bowl stir the cream cheese with the milk till soft and creamy. Add the cubed carrot and fennel, half of the lemon juice and chives. Stir with a fork to make a smooth mixture.
    3. Divide the salmon into 12 equal slices of about 4x4cm. Fill each slice with a full teaspoon of cream cheese mixture and roll it up. Transfer to a serving plate.
    4. Through the top open space insert 2 to 3 carrot and fennel strips into each roll. Drizzle with the remaining lemon juice. Cover with cling film and refrigerate until serving.
