Glorious fruit cake

    Christmas is a time for overindulging and it would not be the same without fruit cake. Soak the fruit in brandy the night before making the cake for an extra depth of flavour.

    • 100g glace cherries
    • 200g mixed dried fruit
    • 2 splashes brandy
    • 150g butter
    • 150g soft brown sugar
    • 1 teaspoon mixed spice
    • 2 medium eggs
    • 200g plain flour

    1. To enhance flavour in the cake I soaked my dried fruit in brandy overnight but if you don't have time for this you can just add to the mixture as normal.
    2. Preheat the to 190 C / Gas 5. Grease a 18 to 20cm cake tin with butter.
    3. In a mixing bowl combine the butter, sugar, dried fruit (brandy also if not soaked fruit), mixed spice and cherries to a bowl and mix together. Add one egg at a time, mixing together well. You may need to add a bit of flour in between eggs to make sure the consistency of cake mixture does not get too runny. Fold in the remaining flour gradually to the mixture. Transfer to the prepared cake tin and smooth the top.
    4. Bake in the preheated oven for 30 to 40 minutes. Check on the cake after 30 minutes; the cake is ready when a skewer inserted into the centre comes out clean. It may need a further 10 minutes or so.
    5. Once cooked remove from the oven and leave to cool for 15 minutes then remove from the tin; leave it to cool completely and enjoy! Yummy.
