P Riot chewy gingerbread biscuits

    I created these biscuits back in September to celebrate the Russian girl band P Riot coming to my home town to play at Banksy's Dismaland. These biscuits taste so good and you can cut them with whatever cutter you want. I made my own cutter for these out of aluminium foil trays.

    Makes: 25 gingerbread biscuits

    • 350g plain flour
    • 1 teaspoon bicarbonate of soda
    • 2 1/2 teaspoons ground ginger
    • 115g cold unsalted butter
    • 175g soft light brown sugar
    • 1 egg
    • 4 tablespoons golden syrup

    1. Preheat your oven to oven to 190 C / Gas 5 and lightly grease or line 4 baking trays with baking parchment.
    2. Sift the flour, add bicarbonate of soda and ginger into a mixing bowl. Cube butter and rub into flour with fingertips until it resembles breadcrumbs then stir in sugar. Beat egg with syrup and then add to flour mixture.
    3. Knead the dough until smooth. Roll out to 1/2cm thick on a slightly floured surface or between two large pieces of cling film. Stamp or cut out shapes. Arrange on the prepared baking trays.
    4. Bake in the oven until golden for about 10 to 12 minutes. Remove from the oven and let them cool for a few minutes before moving them to a wire rack. Cool completely before decorating with icing.
