Homemade gluten free brown sauce

    This recipe was one I developed when on a gluten free diet. Not an identical replacement for the commercial versions - but good enough, if you can't get a gluten free version or want to try making your own. Quantities are not really critical - hence the 'mug' measure used - see what you prefer and what size mug this should be in your own opinion!

    Serves: 20 

    • 1 teaspoon cornflour
    • 1 tablespoon water
    • 1 mug cider vinegar
    • 1/2 mug distilled vinegar
    • 1 tube tomato puree
    • 2 tablespoons molasses
    • 4 teaspoons date syrup
    • 2 teaspoons tamarind paste
    • 2 teaspoons dried onion granules
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon chilli powder
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon ground black pepper
    • salt to taste

    1. Combine the cornflour and tablespoon of water and mix well until dissolved. Set aside so that it is ready to thicken the sauce.
    2. Place all remaining ingredients in a saucepan, mix well and bring to the boil for a few seconds before reducing heat and simmering for 5 minutes.
    3. Remove pan from heat. When it has cooled enough add cornflour and water mixture slowly, stirring all the time. Return to a low heat and stir constantly until the mixture thickens. Bottle and use as a replacement for commercial brown sauce.
