    About this recipe: A mix of mashed potato and cranberry that compliments any roast dinner, pork, turkey or chicken, plus many other dishes.

    Ingredients
    Serves: 6 

    • 750g potatoes, peeled and quartered
    • 250g cranberry sauce
    • 1 pinch salt
    • 50g butter
    • 100ml semi-skimmed milk
    • 1 pinch ground cinnamon (optional)

    Method

    1. Bring a large saucepan of water to the boil over a high heat. Add the potatoes and cook for about 15 minutes, until soft; drain and set aside.
    2. Meanwhile, take the cranberry sauce out of the jar and use a fork to loosen the sauce in a suitably sized bowl (you'll need to spread it later).
    3. Place the boiled potatoes in a large bowl. Add in the salt, butter and milk. Mash the ingredients together using a potato masher (use a large spoon and fork if you don't have one). Add in the optional cinnamon if you want to spice it a little.
    4. Select a serving bowl and quickly a third of the potato mash into the dish, spreading it evenly throughout the base of the bowl. Add half of the cranberry sauce and spread that carefully over the mash to make neat layers. Then add the next third of the potato mash, spreading it evenly as before, taking care to maintain the layers. Add the remaining cranberry sauce (evenly spread) and top with the remaining mashed potato. Serve immediately.

    Tip

    Once the potatoes are ready, this only takes 2 to 3 minutes to do and needs to be served immediately unless you're using a hostess trolley to keep dishes warm. Using home-made cranberry sauce just adds flavour and satisfaction to this simple but delicious dish.
