    We all love a good prawn cocktail! This is your standard, classic prawn cocktail with all the right prawns, in all the right places. This version is quite large and best served as a lunch for 2, or you can make smaller individual prawn cocktails for a more retro 1990s dinner party theme...

    Serves: 2 

    • 250g frozen cooked prawns, thawed
    • 1 tablespoon ketchup
    • 2 tablespoons mayonnaise
    • sea salt and pepper to taste
    • lemon juice, to taste
    • 1 iceberg lettuce, chopped
    • 2 tomatoes, quartered
    • sliced buttered bread (optional)

    1. Drain any excess water from the thawed prawns then place in a bowl. Add the ketchup and mayonnaise and mix well, season generously, and add a squirt of lemon juice.
    2. Place the lettuce in a serving bowl then add the tomatoes on top. Spoon the prawn marie rose into the centre. Season again if desired. Serve immediately with some extra lemon wedges and some sliced buttered bread.
