Delicious chicken and chorizo paella

    I love rice based dishes but aren't a fan of seafood so decided to develop a chicken and chorizo paella. It's far simpler to make than I expected and tastes great! This meal has become a regular in my house and always goes down well when I cook it for guests too.

    Serves: 4 

    • 100g chorizo, sliced
    • 1 large onion, diced
    • 2 chicken breast fillets, chopped
    • 2 teaspoons turmeric
    • 2 teaspoons smoked paprika
    • 120g paella rice
    • 600ml chicken stock
    • 1 red pepper, sliced
    • 80g frozen petit pois
    • black pepper, to taste

    1. In a large frying pan over a medium heat sauté the chorizo and onions together for around 3 minutes in a little oil. Next add the chicken and gently brown along with the turmeric and smoked paprika.
    2. Add the rice, cooking off for a minute before adding all of the stock, bring to a gentle simmer and cook for 15 minutes stirring occasionally. Add the red pepper and continue to cook until the rice is soft (usually another 15 minutes) again stirring occasionally, if all the stock cooks away before the rice is soft add a little more boiled water.
    3. Finally once the rice is soft add the frozen petit pois and black pepper cooking for another minute before serving.


    Seafood could easily be added for a more traditional paella.

    I added some green peppers along with the red, and replaced the peas with sweetcorn, apart from that it was a very tasty winner.  -  26 Feb 2016
