Flapjacks with delicacy

    If you don't like the flapjacks that you buy in most tea shops and coffee shops that are pale in colour and square lumps of fat and pine for something that is better try these. Mine are thinner, taste better and have charcter

    Makes: 10 flapjacks

    • 125g butter
    • 125g brown sugar (I use 50:50 ratio of golden and light muscovado)
    • 2 to 3 tablespoons golden syrup
    • 250g porridge oats

    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat the oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. Melt the butter in a saucepan over medium heat, taking care not to burn. Add sugar and golden syrup and stir round to blend.
    3. Add porridge oats and stir all ingredients-it shouldn't be liquidy but firm 'ish.
    4. Place on the prepared tray (see image). Square off but it will move a bit, which is a bonus-don't worry! This photo shows after its baked.
    5. Bake for approximately 15 minutes in the preheated oven until golden brown.
    6. Score with a knife in a grid - I like square ones and not too large.
    7. After cooking allow to cool before breaking into individual pieces (they harden up) - then stuff yourself. They are a test of self denial/greed....eat with responsibility!


    Like all recipes you can modify after your first go. They are something else!
