About this recipe:I bought a sack of spuds from the farm and they were only good enough to make chips out of, so as we don't eat chips that often I decided to make chips and freeze them before the potatoes grew eyes, then legs and walked out of the sack in to the bin.

Preheat your deep fat fryer to high.
Peel the potatoes (as they are directly from the farm leaving the skin on them wasn't my thing) unless you want to wash them first. Cut the potatoes into chips then cover with cold water for approximately 20 minutes, (to remove the starch).
Put chips into a colander and rinse under cold water then drain and pat dry.
Add in batches to deep fat fryer which is set to high. Carefully lower chips into the hot oil and leave for 2 to 3 minutes then take out of oil and leave to drain excess fat .
Line a large baking tray/sheet with greaseproof paper and spread the chips evenly across the tray to drain.
Leave to cool down then place in freezer in a single layer to freeze, then transfer to sealable freezer bags...voila! Homemade frozen chips, enjoy!
