Mabel's maple cake

    The perfect cake for the young entrepreneur who has no idea what they're doing. Leave plenty of time for this cake to cool before decorating as desired.

    Serves: 10 

    • For the cake
    • 200g soft butter
    • 150g brown sugar
    • 3 eggs
    • 120ml maple syrup
    • 2 to 3 pinches ground cinnamon
    • 2 handfuls flaked almonds
    • 200g self-raising flour
    • For the icing
    • 75g butter
    • 175g icing sugar

      For the cake:

    1. Preheat the oven to 180 C / 160 C fan / Gas 4. Grease two 20cm cake tins and line with baking parchment.
    2. Beat the butter and sugar together in a bowl until light and fluffy. Add the eggs one at a time and beat until pale and creamy. Add the maple syrup, cinnamon and almonds and mix well. Add the flour and mix until well combined. Divide the mixture between the two prepared cake tins.
    3. Bake in the preheated oven for 30 minutes, or until a skewer inserted into the centre comes out clean. Please don't watch any scary videos while it's cooking.
    4. For the icing;

    5. While it's cooking, put 75g butter in a different bowl and sift the icing sugar in using a really small sieve. Mix all the while and set aside while cake cooks.
    6. When cake is done, leave it to cool completely, about 90 minutes. Place one of the cakes onto a serving plate then cover the top with some apricot jam, or filling of your choice. Layer the second cake on top then pour the icing on top of the cake and smooth out with a knife.
    7. Decorate as desired, for example, put 2 or 3 toy dinosaurs, or any other toy figurines you have on top of the cake; make an interesting scene if you like. Then leave and watch everyone look at you with expressions of concern on their face. Smile.
