Oat flour and banana Valentine's biscuits

    For these low fat Valentine's biscuits I made a soft and not too sweet dough. Fill with your favorite cream, melted chocolate, jam or ice cream.

    Serves: 6 

    • 250g oat flour, more as needed
    • 1 tablespoon dark cocoa powder
    • 1/2 teaspoon baking powder
    • 1 pinch salt
    • 1/2 teaspoon bicarbonate of soda
    • 1 banana
    • 200g caster sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 100g fat free Greek yoghurt
    • no sugar jam, fat free cream cheese, ice cream or melted chocolate for the filling

    1. Mix all the dry ingredients (oat flour, cocoa, baking powder, salt, bicarb of soda) in a bowl.
    2. In another bowl, mash the banana and mix with the sugar. Add to the dry ingredients along with egg, vanilla extract and yoghurt. Mix well.
    3. Add more oat flour if the mixture is liquid or too sticky. You'll obtain a soft dough. Wrap in cling film and refrigerate for 30 minutes.
    4. Preheat the oven to 180 C / Gas 4. Line a baking tray with parchment paper.
    5. Roll out the dough and with a biscuit cutter cut out an even number of hearts (about 12 or 14, depending on the size of your cutter). Transfer to the baking tray.
    6. Bake in the preheated oven until firm and lightly coloured, about 15 minutes.
    7. Remove from heat and cool completely. Spread half of hearts with jam, chocolate, cream cheese or whipped cream and top with the remaining hearts.
