Valentine's day gluten free pasta

    This is a simple gluten free pasta made with eggs and oat flour. Serve it Italian-style, flavoured with olive oil, garlic and fresh chilli pepper.

    Ingredients
    Serves: 4 

    • 2 eggs
    • 1 egg white
    • 300g gluten free oat flour
    • 4 tablespoons extra virgin olive oil
    • 2 or 3 cloves garlic, peeled
    • finely chopped red chilli pepper, to taste
    • salt, to taste

    Method

    1. Beat eggs and egg white in a bowl until fluffy. Mix in oat flour until combined and transfer onto a clean work surface or tray; knead to form a soft dough.
    2. Roll out the dough until 1cm thick; use a heart shape cutter to stamp out pasta shapes.
    3. Cook pasta in abundant salted water for a few seconds; drain on kitchen paper.
    4. Heat oil in a pan and add garlic cloves; stir garlic, pressing down to release the juice into the oil. Remove any remaining pieces of garlic and season with red chilli and salt; stir in pasta shapes and serve hot.
