This is an indulgent mousse that's served with a sprinkling of chilli powder on top to give you that delicious flavour combination of chocolate and chilli. It's sure to add a bit of spice to dessert time!

200g dark chocolate, chopped
250ml double cream, divided
3 egg whites
2 egg yolks
2 tablespoons sugar
hot chilli powder, to taste

Place the chocolate pieces into a glass or metal bowl and set over the top of a pan of barely simmering water. Stir occasionally until melted and smooth. Add half of the cream, stir well. Pour into a larger bowl and set aside.
Whip the remaining cream until stiff; keep it cold until ready to assemble the mousse.
Whip the egg whites in a clean bowl until stiff peaks form; keep them cold until ready to assemble the mousse.
Beat the egg yolks with the sugar until pale and fluffy.
Gradually fold the egg yolks into the chocolate, then fold in the egg whites and finally the whipped cream.
Spoon or pour the mixture in 2 ramekins and refrigerate for at least 2 hours before serving. Garnish with a pinch of hot chilli powder and serve.
