About this recipe:
Small nut burgers, really simple, quick and easy to make, very moreish. Ideal for lunch with soup or salad or as part of a picnic. Will also go well with chips.
Makes: 2 nut burgers
2 tablespoons chopped mixed nuts
1 handful chopped seeds (e.g. sunflower, pumpkin, sesame)
4 slices brown bread, crumbed
2 sundried tomatoes, chopped
1 medium onion, chopped finely
1 pinch salt to season
2 medium eggs
- Combine all dry ingredients in a bowl, stir well, add eggs, one at a time, stirring well to ensure a good distribution of ingredients. Shape the burgers in the palm of your hand.
- When happy with the size and shape of the burger shallow fry in olive oil in a pan over a medium heat until golden and hot through, about 8 minutes. Serve with soup or salad.
