Hot buttered rum apples

    Your apples need a drink! This is a quick, cheeky alternative to apple pie or crumble, and the flamboyant finish is sure to draw oohs and ahs from everyone present.

    Serves: 4 

    • 2 tablespoons salted butter
    • 2 tablespoons muscovado sugar
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon cloves
    • 2 medium apples - peeled, cored and sliced thinly
    • 1 splash dark or black rum
    • 2 to 3 pieces shortbread, crumbled
    • vanilla ice cream, to serve

    1. Combine butter, sugar, and spices in a large frying pan over medium-high heat. When the butter mixture is sizzling, add the apples and fry until golden brown and softened.
    2. Remove from heat and pour in desired rum, and flame (carefully!) with a torch or match. Allow the flames to die down before serving.
    3. Spoon hot apples in individual bowls over crumbled shortbread, top with a small scoop of vanilla ice cream. Serve immediately.


    Makes four small servings or two large ones. Increase proportions for more.
