Cod in tomato and chilli

    Love the flavour of this dish! Serve with rice and green vegetables (unless like me you love potatoes).

    Ingredients
    Serves: 3 

    • 1 teaspoon oil for frying
    • 1 onion, finely chopped
    • 1 garlic clove, finely chopped
    • juice of 1 lemon
    • 1 teaspoon chilli powder
    • 2 bay leaves
    • 1 teaspoon chopped fresh coriander
    • 4 cod fillets (or other white fish)
    • 1 (400g) tin chopped tomatoes

    Method

    1. Warm the oil in a frying pan over a medium heat. Add the onion and garlic and cook and stir for several minutes until soft. Add the lemon juice, chilli, bay leaves and coriander and give a good stir.
    2. Add the fish to the pan and cook gently, turning occasionally. After about 5 minutes, add the tomatoes and allow to simmer for 10 minutes or until the fish is evenly white throughout and the flesh flakes easily with a fork. Serve with accompanying veg/rice or bread and butter!

    Got to love it, it's mine my other half likes to add more chilli powder 2/3 teaspoons!! So if you like it hot then add extra  -  22 Jan 2016
