Peanut butter, banana and cinnamon cake with cinnamon glaze

About this recipe: This peanut butter and banana cake is delicious, scrumptious and fun! Ideal for serving with tea or coffee any time of day.

Serves: 10 

  • 175g unsalted butter
  • 1 large banana, roughly chopped
  • 2 tablespoons smooth peanut butter
  • 3 medium eggs
  • 150g brown sugar
  • 200g plain flour
  • 2 tablespoons baking powder
  • 4 teaspoons ground cinnamon
  • For the icing
  • 3 to 4 tablespoons brown sugar
  • 2 teaspoons cinnamon
  • 1 lemon

  1. Preheat the oven to 190 C / Gas 5. Cut a piece of baking parchment to fit in the bottom of a 20cm (8 in) square tin - you do not need to line the edges, grease the edges instead.
  2. Melt the butter in the microwave for 30 seconds on 800 watts. Puree the banana with the peanut butter, melted butter and the eggs - in a blender for best results.
  3. Use an electric whisk to blend the banana mixture with the brown sugar, flour, baking powder and cinnamon. Tip the cake mixture into the prepared tin.
  4. Bake the cake for 30 minutes on the middle shelf of the oven until a skewer inserted into the centre comes out clean. Remove form the oven and turn out the cake onto a wire rack, the right way up.
  5. To glaze the cake, whisk together the three icing ingredients for a few minutes. Drizzle the mixture over the cake and serve.
