Big Al's easy potato and leek soup

A warming and filling cheap meal of potato and leek soup. Delicious served with chopped parsley and crusty warm bread.

Ingredients
Serves: 4
- 1 tablespoon vegetable oil
- 4 medium potatoes, cubed
- 1 medium onion, chopped
- 2 medium leeks, sliced into rounds
- 1.5L vegetable stock
- salt and pepper, to taste
- 150ml crème fraîche or double cream
- fresh chopped parsley

- Heat the oil in a large saucepan over a medium heat then add potatoes, onions and leeks. Cook and stir for about 5 minutes or until starting to go soft. Add stock and bring to the boil then reduce heat and simmer until tender, about 20 minutes; season to taste.
- Blend the soup in a food processor or with a handheld stick blender until smooth. Return soup to a clean pan to warm through, hot water can be added here if needed to thin soup. Remove from heat and stir in creme fraiche. Ladle into warmed soup bowls and sprinkle over some fresh chopped parsley; serve.

A very simple recipe that yields a very nice soup. I cooked the veg for about 20 minutes before adding the stock. It freezes well if you freeze it before adding the cream - 19 Feb 2016
