About this recipe: This recipe is a really quick, easy and delicious substitute for rice if you're trying to eat less carbs. Your whole family will love it!

Serves: 4 

  • 1 large head cauliflower, cut into large chunks
  • 2 tablespoons extra-virgin olive oil
  • salt and freshly ground black pepper to taste

  1. Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.
  2. Heat olive oil in a pan over medium heat; add cauliflower 'rice', salt and pepper. Cover pan and cook until heated through, 3 to 5 minutes. Remove lid and fluff 'rice' with a fork.


You could also use the medium side of a box grater to create cauliflower 'rice' instead of a food processor.

This is lovely but I boiled the 'rice' in the same way I boil the cauliflower ! - 22 Feb 2016


I tried this for the first time as my hubby is on a low carb diet. It is fab and even my 9 year old and 6 year old loved it too. I don't think I will ever make normal rice again - 14 Feb 2016
