Cajun chilli chicken linguine

    Nice and hot, but not over the top, simply very tasty. Delicious served alongside a salad for a complete meal.

    Serves: 1 

    • 50g linguine pasta
    • 3 to 5 sprays garlic spray oil
    • 1 chicken breast fillet, diced
    • 1 to 2 pinches ground black pepper
    • 1 to 2 teaspoons Cajun spice
    • 50g chopped red onion
    • 35g chopped mixed peppers
    • 1 (15g) small chilli
    • 1 to 2 pinches chilli flakes
    • 1 teaspoon garlic butter

    1. Bring a saucepan of water to the boil then add the linguine and cook according to the instructions on the packet, until al dente, about 9 to 10 minutes.
    2. Meanwhile spray oil into a frying pan over a medium heat and fry diced up chicken with black pepper and Cajun spice and cook until chicken has a nice colour and is no longer pink in the centre, about 8 minutes.
    3. Add the onions, peppers and chilli and cook for another 3 to 4 minutes. Drain linguine and add to the chicken mix.
    4. Add chilli flakes and garlic butter and mix together to finish cooking. Spoon into warmed bowls and serve immediately.
