Mussel and prawn linguine

    Very cheap and very tasty, and easily adapted for taste. I like this quite spicy so I add extra chilli flakes.

    Serves: 2 

    • 200 to 250g linguine pasta
    • 10 sprays garlic spray oil
    • 90g mixed peppers, chopped
    • 100g cooked prawns
    • 100g cooked mussel meat
    • 1 (10g) small chilli
    • 1 to 2 pinches dried chilli flakes
    • 1 to 2 pinches garlic salt
    • 1 to 2 pinches ground black pepper
    • 1 ot 2 pinches chopped fresh chives

    1. Bring a saucepan of water to the boil over a high heat. Add the linguine and cook according to the instructions on the packet, until al dente. Stir frequently to ensure that it does not stick together.
    2. Meanwhile in a frying pan over a high heat, spray in the garlic oil and cook and stir peppers for a minute or so. Reduce heat to medium and add prawns, mussels, chilli, chilli flakes and salt. Cook and stir for a minute or two to heat the prawns and mussels through.
    3. By this time your linguine should be cooked so drain it and add to the rest of the ingredients with a little more garlic spray oil.
    4. Cook for another 1 to 2 minutes then spoon onto warmed plates and serve with a little black pepper and some chives
