Remove the casings from the sausages and place the sausage meat in a bowl. Mix with your hands then set aside.
Bring a large saucepan of water to the boil then add the eggs. Cook for 8 to 10 minutes for hard boiled.
Preheat your oven to 200 C / Gas 6.
Roll out your puff pastry (to about 5mm) and leave it aside. If you want to make life easy, buy ready made pastry.
Drain then peel your boiled eggs. Using your hands cover the egg all over in a layer of sausage meat and then wrap it in puff pastry. Repeat this process with all your eggs (to stick the pastry you can dip your finger in water and lightly spread it on the edge of the pastry sheet). Place on a baking tray.
Bake in the preheated oven for 25 to 30 minutes, until the puff pastry is golden brown. Remove from the oven and garnish with dried parsley if desired. Serve and enjoy.
