Chinese salt and pepper chips

    This is my attempt at everyone's favourite Chinese takeaway dish, it's the closest I have managed to get to the great taste of the local Chinese. This recipe can also be used for any meat of your choosing. You can bread and deep-fry chicken or use other meats and add them at the same point as the chips in this recipe.

    Ingredients
    Serves: 4 

    • 1 (900g) packet oven chips
    • 2 teaspoons salt
    • 2 to 3 tablespoons olive oil
    • 2 onions, minced
    • 1 or more peppers to taste, sliced
    • 2 large chillies, chopped
    • 4 garlic cloves, crushed
    • 3cm fresh root ginger, crushed
    • 2 teaspoons sesame oil
    • 2 teaspoons dark soy sauce
    • 1 teaspoon ground black pepper
    • 2 teaspoons Chinese five spice

    1. Cook your oven chips according to the packet instructions and do the following as they cook:
    2. Pour the salt into a dry wok and heat over a medium flame for 10 to 15 minutes (that helps bring out the flavour) stiring occasionally. Pour the salt into a bowl to cool.
    3. Heat the olive oil in the wok then add the onions, peppers, chillies, garlic and ginger and cook for 5 minutes.
    4. Pour in the sesame oil and soy sauce and add the chips that should be ready now.
    5. Mix the salt, pepper, and Chinese five spice together and sprinkle over the chips and veg and mix thoroughly. Continue cooking for a further 2 minutes then serve immediately.
