Chocolate and blueberry pancakes

    This recipe for chocolate and blueberry pancakes makes about 12 and is ideal for pancake day. Serve with whatever takes your fancy.

    Makes: 12 pancakes

    • 100g golden caster sugar
    • 200g plain four
    • about 40ml milk
    • 1 banana (about 100g), roughly chopped
    • 100g blueberries
    • 2 teaspoons cocoa powder
    • 2 eggs

    1. Combine all of the ingredients into a bowl and mix well using a hand held mixer.
    2. Warm a little oil in a non-stick frying pan over a medium heat then add a little of the pancake mixture (about 1 ladle full). Tilt the pan around to spread the mixture. Cook for 2 to 3 minutes before flipping and cooking for a further 2 to 3 minutes. Remove from the pan and serve immediately.


    You could try adding some vanilla if you like but not to much like a teaspoon or something.
