Roasted sprout and cranberry sauce sandwich

    I love roasted sprouts and I love sandwiches; what could go wrong? Instead of cooking the sprouts from scratch, you can also use up leftover roasted sprouts from Christmas or another occasion for this recipe.

    Serves: 1 

    • 1 handful Brussels sprouts, trimmed and halved
    • olive oil, to taste
    • 1 sprinkle salt and pepper
    • 1/2 to 1 tablespoon cranberry sauce to spread
    • 2 slices bread, of your choice
    • 1 small handful grated mild Cheddar cheese

    1. Preheat the oven to 200 C / Gas 6.
    2. Arrange sprouts on a baking tray, sprinkle over some olive oil, salt and pepper.
    3. Roast in the preheated oven for 30 minutes, or until tender and browned. You'll want to shake the tray occasionally to ensure even cooking.
    4. When the sprouts are done, spread the cranberry sauce onto both slices of bread and sprinkle on some cheese. Arrange the sprouts onto it and place the other slice of bread on top. Cut as desired and serve.
