Half birthday cake

    I made this cake for my son when he was 6 months old for his first 1/2 year. The cake is shaped like a half moon - it's literally half a cake! You could make it for any 1/2 year anniversary. It's a dense chocolate sponge with a delicious cream cheese icing.

    Makes: 1 (23cm) cake

    • For the cake
    • 200g granulated sugar
    • 110g plain flour
    • 6 tablespoons unsweetened cocoa powder
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1 pinch salt
    • 1 egg
    • 120ml milk
    • 60ml vegetable oil
    • 1 teaspoon vanilla extract
    • 120ml boiling water
    • For the icing
    • 170g full fat cream cheese
    • 55g butter
    • 125g icing sugar, sifted
    • 1/2 teaspoon vanilla extract
    • 1 or 2 drops food colouring (optional)

    • 1 tube coloured icing

      For the cake:

    1. Pre-heat the oven to 180 C / Gas 4. Grease and line one 23cm (9 in) round cake tin.
    2. Combine sugar, flour, cocoa, baking powder, bicarb and salt in a bowl. Once combined, beat in egg, milk, oil and vanilla. Beat for 2 minutes. Stir in the boiling water to make a thin cake mixture and pour it into the prepared tin.
    3. Bake for 30 to 35 minutes, or until a skewer inserted into the centre of the cake comes out clean. Cool on a wire rack.
    4. For the icing:

    5. Beat the cream cheese with the butter until light and fluffy. Add the sugar gradually and then the vanilla, beating until thoroughly combined. If liked, add a couple of drops of food colouring and mix well.

    7. Once cool, cut the cake in half to make two half moons. Spread the top of one half with 1/4 to 1/3 of the icing and sandwich both halves together. Cover the cake in the remaining icing. Decorate with sprinkles or any other decoration, if desired.
