Strawberry and blueberry pancakes

    Pancakes, enough said! This is a recipe for blueberry and strawberry pancakes but you could use some raspberries instead.

    Serves: 6 

    • 100g golden caster sugar
    • 200g plain flour
    • about 40ml milk
    • 100g blueberries
    • 100g strawberries, chopped
    • 2 eggs

    1. Place all of the ingredients into a blender or food processor; blend until the mixture is smooth.
    2. Warm a little oil in a non-stick frying pan over a medium heat then add a little of the pancake mixture (about 1 ladle full). Tilt the pan around to spread the mixture.
    3. Cook for 2 to 3 minutes before flipping and cooking for a further 2 to 3 minutes. Remove from the pan and serve immediately.
