Place all of the ingredients into a blender or food processor; blend until the mixture is smooth.
Warm a little oil in a non-stick frying pan over a medium heat then add a little of the pancake mixture (about 1 ladle full). Tilt the pan around to spread the mixture.
Cook for 2 to 3 minutes before flipping and cooking for a further 2 to 3 minutes. Remove from the pan and serve immediately.
