About this recipe:This is a really quick and simple meal for two people, with very few ingredients. We've had it regularly in our house for years, and we haven't got tired of it yet! Our favourite is smoked mackerel with peppercorns, but you can use any of the flavours, or just plain smoked mackerel, if you prefer.
Remove the smoked mackerel from the fridge at least 30 minutes before you need it, so it comes to room temperature.
Put the rice and frozen veg in a large pan (or microwave rice cooker), and cover with plenty of boiling water. Cook the rice as per packet instructions, and the veg will cook along with it.
Take the mackerel out of the packet, and remove the skin (you can leave it on if you like, but I find it spoils the texture of the finished dish). Chop it up into bite-size pieces.
Once the rice is cooked, rinse it and the veg with boiling water, drain, add the chopped mackerel, and serve. You don't need to warm the mackerel up, as it will already be at room temperature, and the heat from the rice will do the rest.
You can season the finished dish if you like, but I find it doesn't need it. This dish is very simple, but very satisfying.
