Raisin biscuit pie

    Raisin biscuit pie is a nice crumbly pud. If you like pies and biscuits this the recipe for you. Serve with custard, ice cream or cream.

    Serves: 6 

    • 500g plain flour
    • 300g brown sugar
    • 2 teaspoons caster sugar (optional)
    • 50g butter or margerine
    • 10g (about 2 teaspoons) ground cinnamon or ginger
    • 3 eggs
    • 15g raisins

    1. Preheat the oven to 180 C / Gas 4.
    2. Combine the flour, brown sugar, caster sugar, butter, and cinnamon together in a bowl and stir it.
    3. Crack the eggs in another bowl and whisk it. Then put the egg in the flour bowl and then mix it together with your hands till it is a stiff substance.
    4. Lightly flour a work surface and roll out the dough to 2cm thick. Grease a pie dish and cut the dough to fit. Use the scraps to roll out and form a lid. Sprinkle in the raisins. Cover with the prepared dough lid.
    5. Bake in the preheated oven for 20 to 25 minutes, turning every 10 minutes, until golden brown. Remove from the oven and allow to cool before serving.
    6. When cooled down you can eat them with custard, ice cream or cream.
