Gluten free almond and date cookies

    These drop cookies are made with ground almonds, dates, walnuts and chia seeds. They are quick and easy to make and have the added bonus of having no added sugar. The sweetness comes from natural maple syrup and dried fruit.

    Makes: 24 cookies

    • 315g ground almonds
    • 180g pitted and chopped dates
    • 80g chopped dried cherries
    • 60g chopped walnuts
    • 2 tablespoons chia seeds, or more to taste
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon sea salt
    • 120ml coconut oil
    • 1 egg
    • 2 tablespoons maple syrup
    • 1 tablespoon vanilla extract

    1. Preheat oven to 180 C / Gas 4. Line 2 baking trays with baking paper.
    2. Combine ground almonds, dates, cherries, walnuts, chia seeds, bicarbonate of soda and sea salt in a large bowl; whisk to blend. Add coconut oil, egg, maple syrup and vanilla extract; blend well with a spoon or fork until dough comes together.
    3. Scoop dough onto prepared baking trays with a small ice cream scoop or drop the mixture by spoonful onto the tray, leaving some space between each one.
    4. Bake in the preheated oven until edges are golden, about 15 minutes. Turn off oven and let cookies sit with oven door closed, about 10 minutes more. Remove from oven and allow to cool before serving.

    No added sugar

    Check when you buy to select prepacked dates and dried cherries with no added sugar in the ingredients.

    These are good - a nice healthy alternative to white flour/sugar cookies. I omitted the maple syrup, but added in some chopped up 70% cacao chocolate bar. I will definitely be making these again. Glad I found them!  -  21 Mar 2016  (Review from Allrecipes US | Canada)
