No added sugar banana bread

    This is a free from refined sugar, paleo-friendly, gluten-free banana bread. It replaces flour with ground almonds and the sugar with a natural sweetener called agave syrup. Try it for yourself! It's moist and delicious.

    Ingredients
    Serves: 12 

    • cooking spray
    • 225g ground almonds
    • 1 tablespoon ground cinnamon
    • 1 teaspoon bicarbonate of soda
    • 2 eggs
    • 120ml water
    • 1 teaspoon almond extract
    • 60ml agave syrup
    • 2 ripe bananas, mashed
    • 1/2 teaspoon vanilla bean paste (optional)

    Method
    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Preheat oven to 180 C / Gas 4. Lightly grease or spray a loaf tin with cooking spray.
    2. Mix together ground almonds, cinnamon and bicarbonate of soda in a bowl.
    3. Beat two eggs in a bowl. Mix in water, almond extract, agave syrup, mashed bananas and vanilla bean paste. Add banana mixture to almond mixture; mix well until combined. Pour mixture into the prepared loaf tin.
    4. Bake banana bread in the preheated oven until golden brown on top and crisp around the edges, about 45 minutes.

    We made this for breakfast. Perfect!! Hearty, moist, and tasty. I added an extra bannana and a handful of quinoa flour . I love that it's low in fat, high in protein, and has no sugar. Everyone loves it!  -  03 Sep 2012  (Review from Allrecipes US | Canada)

    Very moist; great bread! I used almond meal instead of almond flour and honey instead of agave. I have tried other grain free/paleo breads, but this one is much more moist and flavorful.     I customized this recipe a bit to make it more kid-friendly. I used 1cup almond meal and 1 cup baking flour and then added a streusel topping (2 Tbl softened butter, 1/4 cup brown sugar, 2Tbl rolled oats, and 1/2 tsp cinnamon).
